Baked egg in an avocado 

I am not a very adventurous cook but I want to eat better and healthier. This has led me to borrow / buy a lot of cook books and spend a lot of time drooling over the pictures. Today however I decided to try to make something and ironically it wasn’t in any of the cook books. I had seen someone bake an egg in an avocado before and decided that today was the day to try it myself. It’s the simplest recipe in the world but because of the baking it does take some time. Also I felt very cool using an avocado as it is the coolest bit of food available right now isn’t it? (Think it’s even cooler than the blueberry and I never thought that would happen. I’m so cool.)

Turn on your oven to 160 degrees. Once you cut the avocado in half and take out the giant seed, put the egg in the space. I cracked the eggs into a bowl before and scooped the yolk in. This way there is less chance of egg going all over the place. Add some chives and then bake.

It took about half an hour before I took it out and I had no idea that the egg would rise so much. Not going to lie, watching them rise was huge fun as was thinking that they would burst at any moment. Once out, add some more chives, salt, pepper, and lemon juice. I think I would also add chilli flakes next time. And that’s it! It’s so easy and absolutely delicious.
