Rice crackers have to be the most perfect snack. I think the only thing that beats them is almond croissants and to be fair to rice crackers, almond croissants beat everything. Recently I was bored and had some time on my hands so decided to add some flavour and toppings to my rice crackers. What I ended up with are three different toppings – one sweet and two savoury – which I fell in love with.

Tahini Race Cakes
I love these because I have fallen in love with tahini. For the longest time I thought all that tahini was good for was hummus. How wrong I am! The tahini porridge I blogged about here introduced me to a whole new world, one I love.
- Fresh basil
Smear a generous layer of tahini on the cracker, add some tomato slices, and then shredded basil.
Cucumber and Soy Rice Cakes
Is soy sauce the best thing ever? Also what is the difference between soy sauce and tamari? One of this questions I care about – the other is literally nonsense words on a screen. (Seriously thought what is tamari? Soy sauce with another name?)
For this recipe you need:
- Soya sauce
- Sesame seeds
Add sliced cucumber on the cracker, drizzle with soy sauce, and then sprinkle with sesame seeds.
Nut Butter Rice Cakes
Is any snack complete without nut butter? No, is the answer to that, no it isn’t. For this recipe I used Pip & Nut’s almond and coconut butter but you can definitely use whatever you like.
- Nut butter of your choice
- Fruit of your choice
Once you’ve smeared a very generous layer of nut butter on the rice cracker, top with fruit of your choice. I had frozen mango pieces in my freezer so used that but I definitely want to try this with blueberries.
Al three of these are absolutely delicious and so, so easy to make and even easier to eat!
