Over the weekend I found myself at home, hungry, with a bag of kale and not much else. I wanted something delicious to eat. Usually I reach for the spinach – it is a my go-to green food – but as I said, I had kale and the desire to do something with it. After a little rummaging I ended up with mushroom, peanuts, and garlic. I could see the beginning of a warm salad forming and couldn’t wait to start cooking.
I am so late on this bandwagon, I know I am. Kale has been throned and then de-throned as the superfood of the moment. I’m not sure what holds the title now – avocado? coconut? – but I don’t think it’s kale. Sure people still juice it and drink it and they make pesto out of it (me) and put it in their salads, but it’s not the cool kid on the block is it? Which is probably the perfect time for me to juice it and see what it tastes like.
I tried kale pesto once and fell in love – it was delicious and I really wanted to make it at home. I have tried to make basil pesto before and while it is always tasty, it’s also always very expensive – basil is at a premium and while kale is the superfood it is nowhere near as expensive. So when I found I had enough kale at home I made some pesto.
